Mutabbal, also known as “moutabal” or “mutabal,” is a Middle Eastern staple. It is dip/spread made from mashed, cooked eggplant mixed with tahini, garlic, lemon juice, and olive oil. The tahini adds a rich, nutty flavor, while the lemon juice and garlic adds tangy and zesty notes. Often compared to another classic: hummus. Mutabbal o ers a more smokey, earthy and creamy flavour profile compared it’s nuttier counterpart.
